Our appellations



The grapes come from separate plots within the appellation:

1) A plot close to the village of Saint-Aubin - easterly exposure, altitude 300 metres, mid-slope, clay-limestone soil.

2) A part of the named plot "Vermarain" - westerly exposure, altitude 280 metres, sloping position on white marl.

Total area 0.25 hectares. These are young Chardonnay vines planted in 1995 and 2006.


Plain Guyot pruning, disbudded in spring. The vines are carefully managed. The soil, which is susceptible to erosion, is only shallowly ploughed. During the summer, disease controls are applied sparingly. Green thinning of the grapes ("vendanges en vert") is carried out as and when required by control of yields.


After maturity has been carefully checked, the grapes are harvested and taken to the vatting house in small bins. There they are lightly crushed, put through a pneumatic press, and the juices allowed to settle. They are then transferred to oak barrels by gravity and fermentation follows. All barrels are of 228 litres capacity and 20% are new each year. They are made by local coopers. We choose fine-grained staves from the forests of the Allier. After 10 months' elevage on fine lees, the wine is blended, treated with finings, and bottled after light filtration.

The wine:

Out Saint-Aubin Village is clear and bright with an agreeable vanilla fragrance. The mouth is fresh and sprightly, the structure light and full-flavoured.

It can be drunk young but will benefit from 2 to 4 years' keeping.

Serve at 11°-13°C with a snail casserole.
