The terroir lies in the named plot "Sur Gamay". Though Gamay is not normally named in the appellation, these selected old vines are located just above the hamlet of Gamay under the rock of Dumay which overlooks it.
The parcels have a south-easterly exposure, altitude 340 metres, mid-slope position, white marly soil with limestone predominating.
These Chardonnay vines were planted between 1950 and 1974 at a density of 10,000 plants per hectare. Surface area 0.48 ha.
Plain Guyot pruning, disbudded in spring. The vines are carefully managed. The soil, which is susceptible to erosion, is only shallowly ploughed. During the summer, disease controls are applied sparingly. Green thinning of the grapes ("vendanges en vert") is carried out as and when required by control of yields.
After maturity has been carefully checked, the grapes are harvested and taken to the vatting house in small bins. There they are lightly crushed, put through a pneumatic press, and the juices allowed to settle. The must is then transferred to oak barrels by gravity and fermentation follows. All barrels are of 228 litres capacity and 20% are new each year. They are made by local coopers. We choose fine-grained staves from the forests of the Allier. After 10 months' elevage on fine lees, the wine is blended, treated with finings, and bottled after light filtration.
Our Saint-Aubin 1er Cru Vielles Vignes gleams with green highlights. The bouquet has a marked minerality (gunflint). The mouth reveals meat and structure. This is a wine of real character. The yield is some 3,000 bottles.
It can be drunk young or, even better, after 3 to 5 years.
Enjoy it, served at 11°-13°C, with marinated salmon.
