Saint-Aubin 1er cru Murgers des Dents de Chien


The terroir lies in the southern part of the Saint-Aubin appellation bordering the Puligny-Montrachet appellation and close to the grand cru Montrachet appellation. It comprises 5 parcels, south facing, altitude 340 metres, mid-slope position. Soil very limy. The underlying rock, very near the surface, pushes the ground up into formations called "dents de chien". These Chardonnay vines were planted first on an isolated piece of ground in 1946, with subsequent plantings in 1964, 1972, 1990, and finally 1997. Planting density 10,000 per hectare. Surface area 1.12 ha.


Plain Guyot pruning, disbudded in spring. The vines are carefully managed. Soil working (earthing-up, de-earthing, harrowing) by machine. During the summer, disease controls are applied sparingly. Green thinning of the grapes ("vendanges en vert") is carried out as and when required by control of yields.


After maturity has been carefully checked, the grapes are harvested and taken to the vatting house in small bins. There they are lightly crushed, put through a pneumatic press, and the juices allowed to settle. The must is then transferred to oak barrels by gravity and fermentation follows. All barrels are of 228 litres capacity and 20% are new each year. They are made by local coopers. We choose fine-grained staves from the forests of the Allier. After 10 months' elevage on fine lees, the wine is blended, treated with finings, and bottled after light filtration.

The wine:

Our Saint-Aubin 1er Cru "Murgers des Dents de Chien" has a sparkling appearance with green highlights. It invariably develops very mineral notes which derive from the nature of the soil. In the mouth it is delicate at first, later gaining in intensity. The finish is remarkably rich. The yield is around 7,000 bottles.

It can be drunk young or, but will be even more enjoyable after 4 to 10 years.

Drink it, served at 11°-13°C, with langoustine a la plancha.
